xoxo, glutie: black bean taco soup.

so cheap. so quick. so good.

what you need:
1 lb. ground turkey, lean
1 can rotel, choose your hotness
1 can organic black beans, rinsed
1 can corn, no salt added
box of gluten free chicken broth
water
lemon
lime
onion
garlic powder
sea salt
pepper
paprika
sugar
cumin
chili powder
cilantro
gluten free cheese (i'm using rice vegan right now because i am allergic to real cheese and soy)
gluten free sour cream
corn tortilla chips or rice chips

in a pot:
chop onion, and dump in pot with a splash of evoo. i also added some left-over red and yellow peppers i had around, but it's not necessary. saute until tender. add turkey, and brown. while turkey cooks, add your seasonings-- sea salt, pepper, cumin, paprika, garlic powder, chili powder, and sugar (i used about 2tsp to 1tbls, each, to taste). squeeze 1/2 lemon and 1/2 lime into the mixture. stir well on med heat until turkey is seasoned and done. rinse black beans, and add to the pot. drain rotel, dump it in. same with the corn. stir to incorporate. chop about a handful of cilantro and mix into your stoup. let simmer for about 5 minutes before adding your broth. smell the goodness?? ok, then add 1 box gluten free chicken broth. if you feel more liquid is needed, add 1 to 2 cups water. cover and let simmer 30 minutes on med-low heat. stir occasionally.

serve up in a bowl with a dollop of gluten free sour cream, shredded cheese, and tortilla crumbles/chips.
