xoxo, glutie: pulled barbeque chicken.

slow cooker style.

break out the crock pots!!

this is a super yummy, super delicious, super juicy recipe for your slow cooker that will yield perfect bbq chicken to pop on a glutie-free bun at your next neighborhood bbq. even better, your neighbors will like it too!

adjust sauce recipe to how much chicken you're making...

bbq sauce (simmer all ingredients together for 15-20 mins).
simmer 1-2 cloves of garlic and 1 medium onion, chopped
add...
1.5 cups glutie-free ketchup (i use the no fructose corn syrup hunt's)
4 palms (palmful) of brown sugar
1 can diced tomatoes
1 can of Coke
1/2 cup of apple cider vinegar
3 tbls paprika
2 tbls cumin
3 tsp chili powder (more for spiciness)
sea salt
fresh ground pepper

chicken.
i used a whole, cut up chicken with bones in and skin still on. about 5 lbs. place breasts at the bottom of the crock pot, and lay the other pieces on top. pour in 1/2 box container of chicken broth (check label for glutiness!). sprinkle with sea salt, pepper, garlic powder (optional, think about the garlic in the sauce), and cinnamon (very crucial!). cover with lid, and don't open again for 8 hours. low heat.

after 8 hours, remove chicken from crock pot, and let cool for a bit (enough so you can handle it). pull chicken from the bones and remove skin. place pulled chicken back in crock pot.

pour sauce over top to cover chicken. place lid back on crock pot and simmer for 2 more hours on low. stir occasionally.
